I don't know too much about Copts personally, but no, I don't think that Copts accept the Gospel of Thomas as Canon, although they of course famously accept other literature as Canon, most famously the Book of Enoch. If I am not mistaken, it may only be the Ethiopian church which accepts the Book of Enoch as canon….the greater Coptic Church may not accept the Book of Enoch as Canon.
There is of course a very strong scholastic tradition in Egypt going back probably even before the days of Moses if our history books are to be believed. I.E…. the Library of Alexandria.
For instance, the Jewish son of Sira, author of the incredible Book of Sirach from the Septuagint, was a Jewish resident of Egypt. Not sure if the son of Sirach was in Alexandria or Hellenic Egypt, though…
