I obviously have much to learn, but it's so annoying and confusing knowing the vast difference between the OT and NT.

Just the fact that God seems to have a complete makeover in personality compared to Him in the NT is jarring. I have so many questions. I read for about 10 mins and rake up hundreds of questions I need to write down to ask a Priest.

No he doesn't. When He asks Jews to exterminate people, he is listing all the reasons and degeneracies that people have done.

Their were chosen that messiah would be incarnated within them. Thats it. And Jews are religion, not exclusively one people. They assimilated Canaanites and later Edomites long time ago, for example.

Actually, the NT is more terrifying.

In the OT when if a person dies they only end up in Sheol, when Christ arrived on earth and the Holy Spirit was given to us, the law was written in our hearts thus no longer can we plea in ignorance for justice. And justice demands that we enter into hell by default.

The Old Testament also promises an age (just google Messianic age) in the future where a messiah will come and usher in world peace. God is not always angry in the OT, and He definitely didn't "calm down" when He sent himself to Earth to warn us about coming day of judgement in the NT. God is not changing, this is where you are getting it wrong. Humanity's relationship with god is what changes in between the Old and New Testament, just like humanity's changing circumstances and relationship with God throughout the whole Jewish narrative history in the OT alone. Abrahamic religion is not something like Hindu religion for example where time is cyclic and goes like a circle, it's a journey that starts with the fall of humanity and goes on to judgement day, and a lot will and has changed along the way FOR US not God.
