you mix the red wine, herbs and gorgonzola then you roll it in some saran wrap and let cool in the fridge. We put it inside a mug to get a nice cylinder of the mix. Then you slice them into little patties and place on the cooked filet mignon so it melts and incorporates. Not sure how it was a crust exactly, but it worked just fine like this for last Xmas dinner cause the discs fit so perfectly on the meat.
Served with garlic parmesan roasted asparagus and a red, white, and purple potato medley after crabcakes/salad first course.
