I think it's the fact that it's so "fake". All the shows you mentioned were glimpses into a comfy and healing world that was fleshed out by the characters. This is very, very deliberately trying to be healing and tries to do it by showing you a world that's basically the same as the real one, just with a cute fox girl who will be your mom/wife for you at home. Firstly I think it triggers that sort of "too good to be true" instinct, where it's just too convenient and starts to feel phony, and secondly it doesn't really serve you a cup of fantasy, it serves you a jug of reality with a paper umbrella of fantasy in it. It's like taping a picture of a cute girl to the inside of your nightmare vision goggles.
I always find these kinds of direct self-insert premises dubious, but they must be working for someone if they keep getting made. But personally, I don't want to pretend I'm me just living with a cute fox girl who lets me pet her tail. If I'm pretending, I might as well pretend everything is different and better.
