The Seven Deadly Sins (anime, at least), actually showed how stuff like this could happen, very well. Basically there was a bit where two young characters, who's races have ridiculously long life spans, and we get to see their childhoods. That aside I can understand why they wouldn't want to waste time and budget on side characters but the manga version is just so much better. It's even more apparent than in the previous episodes. Bard got cocky, went melee against a band of goblins/kobolds (both their clans were controlled by a rogue giant) and one of the kobolds got a stab in, while one of the goblins cracked his head open.

After they killed the Ogre, there's an arc the anime skipped. They will probably use it to wrap up the season because it's a great finisher.
Without spoiling the arc, GS agrees to go on an adventure with the Elf (and by extension the rest of the party). Said adventure is just exploring some ruins. The Elf wanted him to take in the sights, carve memories and be interested so she chose ruins that MIGHT have goblins in them. GS didn't care one bit about anything else but the goblins and when they found out there were Goblins inside the ruins, he smoked them out with a sulfur bomb, something that even the Dwarf found vile. This, according to the Elf, isn't proper adventuring (like >>877214 says). "Normally you go IN the ruins to kill the goblins."
It's not about not blowing up the city at all. It's about changing GS from his autistic state into a generic JRPG Adventurer.
