Unhappily, that's not how my mind works, my brain interprets the quitting as escaping something boring, I never say to myself "I quit", I simply quit the game and tell myself "I'll finish tomorrow" then just forget about the game altogether.
That happened with me with Undertale (Sans), DMC1 (Nightmare), DaS3 (Tree thing) and several others I can't remember now, in my mind they are there waiting for me and anyday I'll just boot the game and finish them.
Usually, I really insist on playing the game nonstop or at least with some frequence, otherwise this "laziness" just comes in and the game gets soft-dropped.

I hate singleplayer games whose skill curve is entirely based upon game knowledge. If you know enough about the game, you win, otherwise you play the game to learn more about the game to get better enough to win. Examples would be Dark Souls, Hitman, FTL (and most rogue-likes), and to some extent the bullet hell genre.
When I do play singleplayer games, I enjoy ones that allow you think on your feet to overcome an obstacle; stuff like Syrian Warfare, Jagged Alliance, Reccetear, Hotline Miami, DF
Most of my time is spent playing multiplayer PvP games, dynamic skill curves are substantially more fun and it feels more difficult than memorizing arbitrary boss or game patterns. It's more rewarding to be better than most people online than to master any singleplayer game imo.

The enemy hero you have to kill is an OP motherfucker who keeps chasing you across the map and his towns get double creature growth every week until you kill some druids who are tough and close to his main town.

Earth 2150 and its The Moon Project xpac were challenging but still good games. Cue Lost Souls, which ups the difficulty to the point where things are blatantly unfair. My favorite element is how many missions are scripted to spawn sizeable armies for the AI out of nowhere. You can have every last of the AI's production facilities razed into the ground, and the game still goes "LOL, NOPE" as twenty heavy tanks spontaneously materialize on the bottom corner of the map and beeline straight to the building or other crap you were supposed to protect.
And it doesn't do that as part of meeting mission-related triggers or objectives, nope. The AI simply gets free units every ten or twenty minutes, while you are constantly cash-strapped and need to preserve as many of your own units as possible. And that's atop of a mountain of other things, like AI units never running out of ammo while the hilariously bad pathfinding of your own ammo transporters usually sees them flying straight into every single AA emplacement the enemy has on the map.

Dropped it on the mission "long night of solace" on legendary, the longsword dogfight is manageable, fun even, but every single fucking alien in the ship part has either a needle rifle or a plasma repeater, then there's the jumper elites with overshield and concussion rifles/sticky launchers, the invisible elites with energy swords and the fucking jackals with homing plasma pistols and needlers, i honestly don't know how to beat this mission, i've tried turtling with the bubble shield upgrade (offers protection from projectiles and fully recovers health), taking cover and abusing the 1-2 combo (plasma pistol+DMR/needle rifle) and sneaking past them, but nothing works.
>every single SHMUP i've tried, too many to list
I simply suck at this genre, even easy/simple games like Ikaruga are too hard for me to beat without using continues, Dariusburst and Akai Katana are the only ones i've managed to clear only with the 3 lives you get, and even then i feel like i cheated on Akai Katana because i used bombs whenever the bullet patterns got too complicated.

I don't really know if this counts as quitting but I stopped playing Super Turbo on Fightcade simply because it feels like my character Blanka has to put in a shit ton more work than much better characters just to get in, and even then I have to play footsies because he can just get swatted by DPs. I reckon I know good players when I see them but it just seems like I have to wade through an impenetrable fog of bullshit just to get good especially when fighting Dhalsim players. Seriously, he can punish my Rolling Attacks EVEN IF THEY HIT.
Maybe it's just problems I have with ST itself. I can appreciate how air-tight its mechanics are but I can't stand how some characters particularly characters I like have near-unwinnable matchups. I can put up with shenanigans in other fighting games but it's ST for some reason that always drives me up the wall.

Like it seems the answer to most missions is just train as many flying units as quickly as possible to destroy the prevuilt enemy base and I never liked playing RTS that way so at first I cheated a few levels before dropping it in Brood War. I've never had many problems with Warcraft III either, I can beat all missions on normal except for the last level of Frozen Throne without much issue.

One interesting thing to note about 2 is that there is no good way to avoid chip damage, especially on wake up the perks of being a Sieger main. I gather invincible reversals were Capcom's way of rectifying this issue, but this wasn't really a good solution in my opinion. Not only were they unnecessarily tight links but not every character had a good reversal Blanka's only invincible reversal being his god-awful super, which doesn't even combo from the first hit, was just cruel. The solution SamSho had since 3 was for easy rolls on wakeup, which both suited the series, given spacing is always important in SamSho, and was a lot more reliable than a one-frame window for wakeup DP.

Besides that, I once decided to stop GH3 when I had to beat Raining Blood on Hard. Then I've beaten that and decided to stop on Before I Forget on Expert. Then I've beaten that and decided to stop on Raining Blood again but this time on expert. I could say I got quite far at least.
Sincerely the worst segments a game can have are those that are incredibly boring, dull an easy for a long time but get excruciatingly hard in the last third. And that without any checkpoints, since you have to go all over a part that you can already do which wastes a lot of time.

I have however, given up on games because of tediousness or boredom.
