The error in your thinking is that they care about video games.
The models were always their primary market. Even Dawn of War only served as an entertaining commercial for the tabletop. Between 40k, Fantasy/Age of Sigmar, 30k (which now we’re getting into Forge World, a.k.a the suit wearing cocaine dealer compared to the mainstream plastic crack that GW peddles.) and the specialist games (Necromunda, Blood Bowl, Kill Team) they have multiple vectors for making a profit. Not even getting into things like Citadel paints and the like.

I really wouldn't mind a battlefleet gothic game by the rebel galaxy devs. Rebel Galaxy was far from perfect but that gameplay style would really fit the space-cruiser battles RG had going for it, and with a few difficulty improvements and a simple modular damage system for every ship it would be just right. as simple as modular damage models can be, nodev here

That being said, the WHFB setting is begging for a proper RPG, be it isometric or Daggerfall-clone. The setting is really well-developed and would lend itself well to it.
Instead we get this.
It's also not sales numbers that keep them going, it's markup. Modern miniatures are plastic, and they don't cost them more than a couple cents to make. Meanwhile, you have the honor of paying them over 30 dollars for a hero and 40 dollars for a 10 men squad of normal infantry.
Keeping in mind that you're supposed to choose wargear options when assembling miniatures so if you occasionally want them to have a flamer instead of a plasma gun, you get to buy two packs (or get to work with a knife to glue a magnet into them)

This is pretty standard for the industry. It's full of failed authors and soy boys. Their latest idea is to pander to children and make paints you slap on which "paint themselves". The game is now 4 dumbing downs tier and utterly unplayable to any one who wants a game.
GW are also scared of video games and have been since the late 90s. Once gaming became a real threat to the tabletop hobby they started to avoid it thinking it would steal their market share. But the hobby is dying as a hobby either way. Their core market is straight white men, who are being pushed out of having the income to buy the shit they make. So now you're left with no core market and a desperate attempt to pander to people who aren't fucking interested. I could go into more details but you already get the picture. It's a dying/dead industry built on the "XD I'm a NERD!" bubble we have going on, which will burst and cause a crash like the dot com bubble did.

Well you might go to the God emperor and his little part of the warp. Worth noting that the emperor is still technically alive and that the "God" in the warp calling himself the emperor is more or less just the belief in the emperor made manifest. In a way if enough people genuinely believe that the god emperor will protect your soul in the afterlife then he might do it. I have no idea what the "god" emperor might do with these souls after he gets them but I am sure its something nice or at least slightly better than getting eaten by demons

Everyone goes to the warp after death with the exception of Eldar and their spirit stones so yes, the Chaos Gods will probably eat them anyway. Maybe warp God-Emperor can defend the souls of those who believed in him, but if he had big enough of a presence in the warp to do such stuff, why didn't Chaos Gods just kill or eat him when he'd be just taking away their food? Maybe he's too small and insignificant, but something's off here. If I remember well, a god killing a god takes over their "domain", so Slaanesh is technically the Eldar god of whatever gods he ate were gods of, so if Khorne ate warp-entity God-Emperor, he'd become the god of whoever worships the Emperor. Still, with how hungry the chaos entities always are, that belief-made warp Emperor would just eat you anyway.
Theoretically with how fickle they are, Chaos Gods and their daemons might not even want to eat you, though, even if you were fucking them over in your life. Unlikely, but possible. You might also end up in the nicer parts of the warp. Most likely after death you effectively die and feed a warp entity unless you were some sort of a big guy.
