EU4 is easier to get into than CK2. Medieval 2, while being a different type of game, is still easier than both of them. If you play M2, go to twcenter.net and download the mod 'Stainless Steel', then the submod 'Stainless Steel Historical Improvement Project'.
CK2 and Medieval 2 take place from roughly 1000AD to 1300/1400AD, although CK2 does let you start as early as the late 600s if you want. EU4 starts at 1444AD, so at that point Byzantium barely has anything left, but still clinging on.

Gladius is a turn-based strategy game where you're in charge of a team of gladiators that you get to recruit, train, equip and have fight in the arena. It also features fantasy elements since you fight and can recruit monsters as well.
Gladiator/Colosseum (wrote it wrong) is a beat'em up where you create your own character, train him via minigames (think Virtua Tennis) and then go fight in the arena. You can buy various equipment and female slaves for stat bonuses and use pretty much anything on the field as a weapon. As an example, if an enemy loses his helmet you can pick it up and bash him to death with it. It also has a sequel on the PSP called Gladiator Begins.
Shadow of Rome has already been mentioned IIRC, and it's a game where you get to play as a Roman centurion, and there's also stealth sections as Octavian which are of dubious quality. Still, it's made by Capcom.

Technically the Cossacks won the military conflict. They were “convinced” read: bribed into not raiding southwards by their polish overlords. Some of them did it anyways up to the late 1700s.
