It's because the gameplay is simple and straightforward. In Ico it was done well, it plays like it was supposed to: an untrained, flailing boy desperately keeping shadows away from a girl. You don't have any major combos or timing to learn. The fact that it never got too dull or annoying is because it was extensively playtested and tweaked until it played smoothly. In shitty indie games (and many shitty AAA games) playtesting isn't done at all so they end up aping the aesthetics without any sense behind it.

Even if there could be a better or worse outcome, the only way to know is to keep going and remember what made you start your journey. To be honest, I have thoughts of suicide every few months, but the things that keep me going are why I enjoy the things I enjoy, and the possibility that I can find such joy again. I enjoy videogames so much because I would play Kirby games on the SNES with my grandma. She taught me how to read with Super Mario All-Stars, and once I could read books on my own, she got us an N64 to play Banjo-Kazooie with her. She had to get me through the underwater parts though because of the sharks. This is going to sound pretentious, but I doubt your father would want you to not enjoy life. You can be sad or angry or frustrated, and you have every right to be, but not enjoying life to some degree is just a waste.

The curious thing about Ico is that it feels like there's this huge castle with obscure purposes but you only see a sliver of it. In both Ico and SoTC you feel pretty alone in a big, dead-silent place. SoTC was an amazing game. Ico less so, but you'd play it anyway for the lore (if you can get any from it).

So I’m on my second playthrough to get Yorda’s dialogue and I’m curious, is there any better way to deal with the flying enemies? That fight leading up to the final one was annoying as hell as I was just jump shotting them or waiting for them to sneak up on me.
the ending was surprisingly nice for how depressing these older Japanese vidyas tend to go.

I think they more take inspiration from it cause they're too stubborn to admit that Team Ico is famous for Shadow of the Colossus, a game that balanced that shit and good gameplay rather than the game not too many people actually remember or liked as much and think that Ico is why they're successful.

The disconnection from reality and the pure simplicity of the plot guides a player into self reflection, so it ends up being very personal. This applies to the trilogy as a whole. The indie devs that understand this principle end up failing because they want universal appeal and are too ambiguous by creating sexless, raceless protagonists without any story or motivation, and they end up with something utterly unrelatable.

I personally love the game. It's immensely comfy imo. I know that Anita and McIntosh hate it for being patriarchal about a male protecting a beautiful, weak, and submissive girl. However, their hatred of Ico games (Ico, SotC, Last Guardian) is a plus for a fan like me.
But honestly, the only things I hated about Ico were:

It's incredibly easy, predictable, and boring. The final room where you permanently kill off all the shadows posed more of a challenge.

Call me a nigger, but I wanted my watermelon ending. It's available in some versions but not all. And I only complain about its exclusion in some editions because it truly is the perfect way to end the story. Without it, the story somehow lacks closure imo.

Ico and Shadow of the Colossus were some of the first AAA games to rely heavily on visual language, art direction and music to tell a story and evoke feelings using a rather minimalist design. Simple story, well realized and well presented that explored themes of relationship using its mechanics. While not the first games to do any of that, they certainly were the most cohesive and notorious especially because of high production values, which was unheard of back then for that type of game. They had a clear vision and distinct style to them (but you don't see Ueda's name plastered all over like hackjima does with his games). Above all they were videogames first, you can skip 99% of cutscenes to experience the fucking game unlike games like nuGOW which are so full of themselves making you endure every fucking cutscene and shit in the name of art.
My only complain about those 2 games is that they pretty much started the whole videogames are art bs, so much so even Roger Ebert even admitted SoTC to be the most cited example of videogames as art.

Wrong, she always turns into a shadow after absorbing horny power from sacrifices (but not Queen's essence since Ico murders her before a transfer could happen). In both endings she sends you out in a boat before castle crumbles and in both you find Yorda washed ashore and in both endings she wakes up. The non-watermelon ending only has one shot more, showing them eating watermelons together, that's all. Also you can only get it on new game plus, it's just a bonus.

Most of the game is just moving around these giant abandoned castles solving simple block puzzles, this sounds boring but because the buildings are made so well it isn't. It is the best example of 'architecture as character' in any game i've played
