I need a decent roguelike. I got bored of adventuring through Dwarf Fortress, as I felt like the controls were my major issue to get around.

Stonesoup. It even has auto-explore so you don't need to walk around when there's nothing interesting to do.
Iter Vehemens ad Necem and POWDER are also pretty good.

ToME is a mixed bag. On the one hand it has intuitive controls and a good UI with the option for using the archaic keyboard controls of other roguelikes, and generally a lot of quality of life features but on the other hand it lacks (or rather purposefully omits) several classic features of roguelikes like item identification, blessed/cursed items, managing consumables, and has some other un-rougelike features like skill trees and a hotkey bar of skills akin to an ARPG and the damage calculation system meaning you and your enemies' HP and damage will be in the thousands in the lategame. Also the biggest issue of all that will ruin the game when you realize it is that the biggest - and only significant when you know the game very well - challenge the game offers is in the elite monsters which are just regular enemies given an arbitrary set of skills that could be very different from the area's local enemies, i.e. you might not have the elemental resistances and whatnot to fight it since you geared specifically for the area and you have no control over that

They added a hydration mechanic which was shit, but they added the ability to piss on enemies/pets that would enrage them
The pissing mechanic wasn't so much the main reason people disliked it, but rather the massive nerfs and hydration mechanic

It's really too bad the anti-D&D/Tolkien spergs got a hold on the development of SS, they were the beginning of the end. Imagine removing Mountain Dwarves and High Elves and replacing them with lolcats and tentacle monsters. Who knows what they've been up to in the intervening years since I stopped playing, designing their game by a constant fight for statistical balance and with no conception of enjoyment and wonder.

Desktop Dungeons is a good mixup of the Roguelike formula. Enemies in the dungeon will stand in place while you move freely, but you have a limited amount of space you can explore for healing. Lots of races and classes and challenges to choose from. Both the old pixelshit version and the newer, expanded version are worth playing.
And before you call me a shill, here's a magnet link:

You could try cogmind but theres no free version. So unless you want to torrent it you have to pay. But its pretty cool. You play a robot and instead of spells and rings or whatever you find parts to upgrade your body.

I think what you're getting at is how the inventory plays virtually no role in the gameplay beyond being a place to keep spare equipment. There are no tools, no potions, no scrolls or any sort of consumable that allows you to do special things, with the exception of a single charm slot. There's no inventory management or having to deliberate over using item X to survive an encounter, since everything is just an ability with cooldown.
Does that sound about right?
