I just finished my first playthrough of Jets 'n Guns Gold in probably 6 years, and listening to it with fresh ears, I had a 'holy shit, this is a shmup soundtrack?' moment. The game's OST was done by a band described as "SID Metal", for using an electronic organ with a Commodore 64's sound chip (the Sound Interface Device, or SID) implanted in it. So those beeps and boops aren't scripted, but a live human playing a physical instrument. The band itself, Machinae Supremacy, is a kind of edgy anarchist "smash the system" 80s/90s punk group, but they fucking nailed this OST. They have a big history of taking inspiration from classic games in even their studio album work.

The game itself is a Western-style shmup, so lots of twitch-reflex gameplay instead of Eastern-style danmaku pattern memorization. An absolutely ridiculous number of weapons, too.

Embedded is the game's entire OST. Suggested tracks/personal favorites are:

00:00 - The main title theme.

15:57 - Lava Trouble Bubble

40:47 - Death From Above

1:03:05- Mostly Dark Universe

What other really unique soundtracks are out there? Not just 'good', but strange.

I was yea close to including it in my recommendations, but I didn't want to throw out a whole bunch of them and it's right after the main theme anyways. Glad you like it. Apparently they've had tracks from this game (and their studio work) appear on In the Groove as well. Megascorcher in specific, at least.

There's a whole track listing with timecodes if you go to the YouTube page itself and look in the uploader's comments.

That has a nice title theme OP. I like the Panzer Dragoon series' soundtrack. The closest that any of them get to anything that falls within genre standards is the episode 1 theme and main theme of the first Panzer Dragoon, the rest of it is more of a mix of elaborate synth and occasional rock. The sequel Zwei drops that sonic identity entirely for what might be closest compared to a John Carpenter score with a bit more focus on musicality and less on pure wallpaper/ambiance. Very down tempo and unique sound.

The last Saturn game went even more in that direction but with much more structure to it. Mariko Nanba and Saori Kobayashi hit it out of the park by combining polyrhythms of the more ethereal Zwei and tying it all together with at times hauntingly airy instrumentals, bombastic percussion that sounds as if it's bursting out of a giant creatures chest and being played with its bones, or being so bizarre it's hard to identify what the origin for the samples were. It's all the more fascinating because Zwei and Saga, unlike the original do not use Red Book audio and are entirely synthesized by the Sega Saturn's sound hardware. The cherry on top is Sona Mi Areru Ec Sancitu which has lyrics written in an entirely made up language made up of elements of Ancient Greek, French, Roman and Japanese by Eri Ito who is considered one of the greatest living Classical Japanese singers with a vocal range you'd normally find in a kabuki theater along a backing male and female chorus.

I fucking love the soundtrack to Jets'n'Guns, but some of it is a bit lazy, just being instrumental versions of the band's songs, even if those songs are really good. It's nice that they keep getting included in vidya game soundtracks, though.
