I played a good chunk of splitscreen with friends, screenlooking happened infrequently, and when it did we'd just call each other "Fukken cunt!" and carry on because it's a fucking game, not a 5000$ tournament.

OP didn't say they were good games. He said they defined gaming. Basically people saw they sold well, and they ripped their ideas to try to get the same success. Some of those games sold well enough to get sequels, and those sequels evolved the idea it originally stole a bit. New developers see that all games do things in x way so they also do things in x way. It might be good or it might be bad, but it defined how the current industry approaches the genre.
