People say this a lot, but I never get why. Was it the gameplay for you? Playing on hard mode gets intense because I can't afford a single mistake without losing a unit, and it gets a nice balance between simple concepts and complex considerations. It's unironically one of my favourite strategy RPGs in years.
I swear to fucking god I'm not trying to be that one contrarian in a thread of a game /v/ is mostly lukewarm about, I just genuinely don't get what people find boring about it.

For those not aware, enemies and you will ALWAYS take turns alternatively, even if it's 8 vs. 2. Battles are encouraged to be as drawn-out as possible, whittling enemies down to minimum health so they don't get multiple turns for every one you get. It's a disaster.
Did later games fix this in any way?

I'd say yes. BS2 has a Survival Mode that changes it so the turn order is fixed: attacking that low-HP enemy just skips to the next unit in the queue, whether it's friend or foe. BS2 made a crapton of improvements for depth.
BS3 might have a fix for it, I haven't kept up with the alpha battles.
I'd try to ignore enemies in BS1 hard mode and it wasn't always worth it. They'd chip at my units' armour and only succeed in softening them up for the enemy.

If you knock the enemy army down to one unit then Pillage mode kicks in, where your army gets to move all at once before the last unit gets a turn.
Otherwise, BS2 gives Rook an ability that forces Pillage mode early, and its survival mode has that built into the game.

Yeah, that is a weakness of the first game. Most of the fights are dredge and there's only four major types of them with about two/three subtypes each. Really, you have to go out of your way sometimes to fight human or varl. I guess I find the mission variety and my own heroes enough that it doesn't hamper my enjoyment of it.
What's most frustrating to me is the second game has a fuckton of enemy variety.

I played it. I really like Banner Saga and my Hakon was a beast after I found that clasp that gave him +3 levels in the skills he had. 25% to resist 4 health and armor damage, 20% to dodge an attack. He was a monster.

At worst maybe there was some "stronk women" but nothing too absurd. Having women be flawlessly feminine and devoid of any capability while they and their family are fleeing for their lives is a little much, even for me. i didn't mind the combat in the second (the first was flat out bad for reasons already mentioned). i did think the second's resource management for treks was way too lenient, you could basically give away all your food and take in every new group and still be fine. both games had incredibly abrupt cutoffs which bugged me.

If you're only in it for the gameplay, then I suppose. But I wouldn't recommend it, since it's a trilogy that they actually planned out: it'd be like reading The Two Towers before The Fellowship. Even more since this is one of those choice-and-consequence games, where different events can happen based on your calls. Sometimes it's minor like flavour text, other times it's bigger like a dead character, other times it's an item or a different mission, or sometimes it's massive like who the protagonist in the second game actually is

That's one of my favourite things, as it affects things like opening moves. You can extra willpower to do some damage to a full-strength, full-armoured enemy at the start of the round and make them do less damage. Taking away armour is the only way to do consistent long-term damage, but is it worth the risk of ignoring their strength and letting them hit you? It varies.

The axe 's edge will chip unless you hit them at an unlucky angle but it would be the handle that breaks first before the head. Considering the size and weight of those big guys carrying their equipment the amount of force required for the axe to break would have to be much higher otherwise even just hitting puny humans would break their handles.
