Bright colors.
Every single one of the games I just listed has a bright, energetic color scheme, often accompanied by a cartoonish level of detail. The fact of the matter is that people play video games to experience a heightened experience of reality that just isn't possible in the real world. They play video games to escape from their dull, boring, realistic lives and enjoy something more exciting and happy.
Color theory has been a known and documented phenomenon for decades. Detection of certain colors stimulates certain emotion-associated neurons in the brain. Red makes you feel passionate. Bright blue makes you feel energetic. What the fuck do gray and tan make you feel? Bored and apathetic, that's what.
Of course there have been exceptions, going both ways. Including:
NieR: Automata
God of War: Wife's Son Edition
Soybreakers
The entire Souls genre
No Man's Sky
Battlefront: II
But statistically speaking, these games are outliers. They succedded/failed not because of their choice in color scheme, but rather in spite of it. The success stories brought unbeatable gameplay, graphical detail and humor to the table, and the failures had to do something jaw-droppingly out of line, such as turn your entire game into one massive virtue signal or have an outright absence of content, or be the greasiest kikes to ever pinch a nickel.
This pattern is nothing new. You could even argue as far back as Minecraft and Skyrim. I bet you that you could take any existing game and boost its sales just by doing nothing more than boosting its brightness and color contrast.
This is why the "gritty realism" meme needs to die. Normalfags will argue that they want "immersion" and "serious emotion" but then games like PUBG, Fallout 4 and Destiny 2 continue to get rolled over by their more lighthearted counterparts. Normalfags don't know what the fuck they want.

The artstyle is original for all the casuals that never saw anything like it after many years of realistic looking games and it's game loop is simple enough that it can hook you very well.

It's main selling point was that it was actually hard to play and a great chalenge. The second point was the quality of the animations and this is not about the colors, it's about the amount of frames and variety of animations. It was a game with a lot of effort placed on it and it shows.

It's a 4th wall breaking waifu bait game, it's not any more colorfull than pretty much every other VN out there. It got popular because people were looking for more Undertale or they just like the twist in the story.

Not just Pokemon. A large number of GB games had color added if you play on GBC. And what's more, it wasn't just four colors per game, every layer could have a different pallet, and I'm pretty sure it could detect when to switch pallets.

99% of the games you listed have been successful because of heavy marketing, good word of mouth or a community that won't shut up about them. It has little to do with the fucking colors, the reason games are more colorful now is because the entire industry grew out of the brown fps phase. Also, adopting a more colorful or stylized aesthetics means that you don't have to dump as much resources rendering "realistic" graphics.

the batter is the protagonist of "Off", a indie RPGmaker RPG. the game is one of the most popular free indie games around from the sheer quality of the writing and music that accompany it. In Off, there is rarely more than 3 colors on screen. its all black and white with one or two complimentary colors for the details of the area you're currently traversing. the first world is yellow, the second one is green, the third one is pink, and so on, correct me if i'm wrong, but the only times you see another color in Off is when an extra color is needed to signify something in the environment, for example, a river of processed meat, or a puddle of blood.
That is, until you purify each individual worlds "boss", which then removes all life from that world, making it only grey.
