Obsidian is able to do it in their 1 year dev time since their games are usually glorified mods of the previous game they're following up. Fromsoft sure, they've been making what they want to since I can remember. The Monster Hunter team/lead seem pretty defensive of their series, which is good, considering how badly everything else at Capcom is going. Croteam still seems alright too.
I think it's best not to get attached to studios since they can fall apart at any moment without warning. But there's definitely still veterans around that care, despite how things have been going. There's also a lot of genuinely good smaller new games most people take for granted or don't notice.
