You can get the smithing text for Red Demon and the spear easily from the Ii Naomasa dual. The Raging Bull armor text is easy no grind needed but you can't get the text for his spear until the fifth region. You can get all the armor as drops from their appropriate missions easily though.
Fyi, set bonuses are the equipment meta of this game (along with reforging). Don't be afraid to mix and match them either as you see fit. There are also unique bonuses that aren't true set bonuses that can be beneficial to make builds around as well.

I quit and sold the game at the exact same point, too (Yuki Onna). I wanted to like it, as people were saying good things about it and of course it was getting the "it's like Dark Souls!" treatment, and I beat all those games, but damn. Something is off about Nioh. It was fun when I was going through stages, but the bosses were consistently a chore.
It's as you said, there's basically one specific thing that you have to do to beat them all, and you're really just running back to the boss room, getting butchered, then running back over and over until you figure out the one trick to that boss. None of the bosses were fun. None felt like they were challenging my skills. They all felt like "hey, have you figured out my gimmick yet? No? Back to the start of the level you go."
I'm glad I quit at Yuki Onna. Fuck Nioh.

If you're going for a light armor one kat build then you should look into the Yagyu set maybe with a few pieces of equip form other katana sets to double up the set bonus.
At the the very beginning of the game you should go with a Legendary Strategist set since you can get it easily. Later on you could also switch to Genius Strategist, which is actually medium armor but looks the part quite well.

Even if you don't use a different weapon or you ranged weapons you should still consider equipping weapons into those slots to take advantage of set bonuses. WotW bow would get you 30% extra Tiger Sprint if you have a set bonus -1 accessory, for example.
