Story's better than Septem and London at the very least. Don't worry though, next singularity is when the real writer shows up. Rama and Sita are precious and must be protected at all costs. At least Karna's death here made more sense than it did in Apocrypha. I used the Grail on Kojirou, but now I want to grail Leonidas.

The school doesn't really count as a floor, since it's the Seven Seas that make up the arena. The 4th floor was a choice between either Vlad or Arceuid as your boss, and they just skipped over it entirely.
At first I thought it was just poorly adapting the game, but now I see that is a poor sequel to the game, while simultaneously retconning nearly everything important. MC's motivations? The reason behind them is gone, her being dead was either dropped entirely, or ignored, as they sorta gave that story beat to the new guy, who does nothing with it. All servants don't matter, when before they were the highlights, Rin is yet again forced as the main girl, DEADO FACEU is the stupidest shit i've ever heard, and Nero doesn't even use her powers consistently. It's not a fucking Dead End, she still had two more uses of Thrice Setting Sun that, apparently, work passively now.
Also, they ruined the interesting aspect of Julius coming back, since now it's just a known quantity, and has happened before so often that they have a name for it. Also holy shit, why is Twice Pieceman even here? You were supposed to FIX the story, Nasu, not make it worse. This whole "what if the story kept going" thing could have been cool, but now it doesn't even fit with Extella, which is the overriding canon going forward.

Actually only 99 other Manjew's, they are all Shadow Servants. One of the enemies is Shadow Emiya with two break gauges. First one is 403,000 HP.
At the start of each turn all Angras are buffed with Attack Up (1 turn) and Crit Chance Up (3 turns)
Emiya's second gauge is 358,640 HP. He casts 1,500 HP Curse for five turns on you. This Curse cannot be removed by any means.
Emiya's final hp bar is 302,200 HP. After reaching his final gauge, Shadow Emiya will use an upgraded version of Saint Jannu's NP and make all enemies invincible for 3 turns while stunning himself for 2 turns.
While there are 100 enemies, you only need to kill Shadow Emiya to win.

So for Cu, Herc, and likely a support Herc that's easy, the Berser-car's get four lives each. Manjew's in the back row and Miss Surfer Mor has her Endless Summer skill she could use. I really wish at some point Mordred gets her Instinct skill replaced with a Guts skill called 'Mother's Curse' or something, she canonically has Battle Continuation at like Rank B from the last wound she gave Arturia.

MURRICA > London = Okeanos >= Orleans > Septem. Orleans actually had a slightly clever setup with some of the servants fighting their counterparts (Carmilla vs Liz for example), Okeanos was ADVENTURES!, and London actually made better use of the apocrypha servants that apocrypha did. Also, Tesla was excellent, but he should have had more screen time. MURRICA was better, but not by that much, it did seem odd that Robin could reach half-way cross-country in 1 hour, but Edison's performance sold it in this singularity.

Notes is Nasu with the Nasuisms multiplied by a hundred and a lot less of the "Humanity Fuck Yeah" that he started to develop later down the line. It's a story about a dead future Earth where Gaia herself is gone, and in her death throes called on the other planets to send super-aliens (TYPEs) to eradicate everything, where the only survivors of the planet are GMO humans (Liners) and one hundred species of scientifically-mutated primate/beast hybrids (A-Rays) who were once at war but came together to take care of the aliens. The world is contaminated by something called Grain, which these human-remnants have had to adapt their bodies to survive. Ether Liners are super-Liners who use the Grain to create Demonic Swords.
Ado Edem, the strongest Ether Liner, manifests a Demon Sword known as Slash Emperor that draws from what remains of the Earth to create a super-weapon scaled in size to equal the opponent; i.e. mostly useless against humans, but against the TYPEs, which have no concept of death (but do have a concept of being sliced in half), it's one of only two weapons that are actually useful. Oh, and Slash Emperor has what looks like a blue aura, but it's actually the sword cutting through the red sky of the dying planet to reveal the "Truth" (like Ea). Seeing as how dangerous this ability is, everyone else locks him up in a chained castle, as with Arcueid, until he must be called upon to (literally) kill a planet.
The very short plot of Notes is about the last "pure" human still alive on the planet, Gun God (named for his Black Barrel, the only weapon besides Slash Emperor that can put down a TYPE; notably, as with Ado Edem, his life is shit when the end of all life on the planet isn't eminent), and the Angel who one day shows up in house. It's worth a read.

It depends. Cu Alter does pretty much what JAlter does. He has a better Class to kill bosses while JAlter only has advantages against Berserkers and Rulers.
His skills focus on his own survival while hers are more focused on dealing more damage and both get extremely better with Merlin.
Cu Alter's real weakness is his awful NP gain that isn't an issue if you have Waver or Merlin feeding him with NP gauge while JAlter's is her Class and how she can't deal extra damage against non Berserker or Ruler bosses but this also means she deals neutral damage against anyone who isn't an Avenger and those bosses are rare.
tl;dr: Either one are amazing at what they do so the main factor is if the person like Jeanne or Cu more. Or if the person in question is a whale and can roll for both.

Cu Alter doesn't play like JAlter, he's a Hercules with better damage and less survival. You really underestimate that NP gain issue that Cu has because JAlter not only has the highest Attack stats in the entire game, but has always phenomal NP gain where you can run her near unsupported. Conversely CuAlter can do more amazing things and more damage consistently but even with good survival skills he's still going to die incredibly quickly without really good support. Not everyone is going to have a Waver or Merlin to prop up Cu Alter and stating that JAlter is interchangeable is laughable considering how well she can function by herself, with support just making her even more broken. This isn't even including crit meta where Cu Alter simply does not crit the same amount of time as JAlter no matter how hard he tries.
tl:dr he's a less survival based Hercules that needs support like any other Berserker to shine as oppose to JAlter independent tool kit that skyrockets with proper buster crit support.

The one-shot comment is a little silly to mention, since that's pretty much how all fights go down. Yet I keep seeing it everywhere.
Like, in F/SN, fights take a while because it's a VN, and you read all of the things going through Shirou's mind. But most of the stuff does down a lot faster. Like, him dropping the Reality Marble to fight Gil? That's not even a full minute. Nine Lives Blade Works? That's maybe a couple of seconds. Seibah takes Medusa down in one shot with Excalibur. Rin throws jewels at Caster, then simply blitzes her with Chinese martial arts. Really, the only 'long' fights are the ones that take place off-screen (Lancer vs. Gil, Herk vs. Archer). And pretty much anytime a Noble Phantasm goes off, someone goes down.

Bullshit, there's a difference between a one shot (Gilles De Rais Tentacle Monster getting excaliblasted) and a quick fight. And the best examples of long fights between servants are all in the original.

You also forget the Lancelot vs Saber fight in Zero as well. I'm not going to argue that they aren't some shitty fights that do indeed just lead to "hurr durr use NP and die" but, the fact you clump Emiya vs Gilgamesh shows you're not understanding the concept of one shot. Emiya vs Gil is the worst fucking example, yes, the fight is quick, but it's a comparatively long drawn out struggle to get close enough to strike Gil, he didn't even use NP in fact he just prevented Gil from using NP. Then he didn't even actually kill until Archer finished him off.
That's secretly one of the only good parts of Apocrypha, most fights don't boil down to use NP and win. Spartacus blew his ass up but didn't actually get anyone important. Fran's NP was ineffective and she bit the dust. I've always wondered the best way to replace gacha in this game. The SMT style "encounter in the wild, make contract, summon whenever you want" makes sense in the way Grand Order does it as you slowly amass a massive army of heroic spirits to take on things like the fucking demon pillars that should be hard to kill with anything less than hundreds of them. You could even have a "respect gauge" where depending on how much a particular spirit meshes with your personality the stronger/more things he could do for you, with of course disagreeable servants like Spartacus being almost completely wild and don't listen at all of chilling with Cu.
You could also go the route of a game with you set in a more "standard" grail war where you are in the modern day as a magus going around searching/stealing summoning catalysts, or hell, if you really wanted could kill an enemy master and convince their servants to make a contract with you. All just speculation of course, it's sounds really fucking fun in concept compared to gacha hell.

What you don't seem to understand is that most of what you're describing goes long in the written format - not in the visual. That does apply very well to the UBW finale post-UBW drop. Taking into account everything before-hand makes it longer, yes, but even then, what occurs on-screen is a much slower. It's why the anime adaptation had to throw in the flashbacks and other crap - without that, you could not replicate that.
That's not to excuse Last Encore, since the designers should be working on the fact that they're practicing in a visual medium. If you wanted to keep the game flow more or less the same, you could pull servants a fixed number of times from a pool as you go through the story. The pool would change its servants depending on the story, and once you pulled a servant, he/she would be permanently removed from the pool (all servants would be NP5). That would keep some randomness but ensure that, by the end of the game, you got everyone.
The most obvious problem with that setup is one person pulling Merlin right off the bat while another gets him right before the game's over. Maybe each pull would guarantee certain numbers of 5*, 4*, 3*, etc. servants and CEs, with the pool contents balanced as necessary throughout the game. The fundamental issue with getting all the servants is that, once you get certain servants, the rest of them are just baggage- so if you're going to let someone get them all it'll require either random grinding hell or early-game forced use of lower-tier servants to make them all somewhat useful.
