Look up boxing tape. The vambrace guard is to make sense of blocking swords and such with no weapon and to give him some tweakable bits like the other characters. Wiki backs this up as well listing his "weapon" to be his body/fists. Hell even his ultimate "weapon" was simply nothing (showing that his fists/body are the true "weapon"). Master Raven and Kunimitsu come to mind. The latter is directly related to Yoshimitsu's story and would fit in nicely (hell, she could be the character for generic kunai moveset).
I'd love to see something a bit more crazy, like a slav mute soldier wielding a short bardiche. To keep it balanced and entertaining, I'd give him a very solid and quick attack for the "While running+Vertical attack" command (triangle in a PS button scheme).
He could be related to Hilde or something.

Calibur and Edge are the extreme's of chaos and order, Calibur only reared it's head once the seal on it had been broken. Kinda feel sorry for Siegfried in the scope of things, he thinks he's on a quest for redeption but is nothing more that a pawn of Calibur.
