I extensively played gens 1, 2, 3, and D/P; it was cool during gen 1 at least, then I still had fun with it during gen 2 and 3 and D/P pretty much by myself
then HG/SS came out and it suddenly became popular in high school, and presumably also at most first-world schools and colleges; I never boughtor played that one myself, but I also don't know why it got as popular as it did in the first place unless it was knowing that the worldbuilding was good combined with good and new features gen 3-4 pokemon and alot of content, even if they'd already done it before
then I bought a gen 5 game, tried to immerse myself in the story, and then at some point before E4 it just felt like I wanted to get it over with
perhaps the only hard part of the game was the cult leader's hydreigon, then after I beat the story I just put the game down and never bought another mainline game again

Sapphire was the last game I bought. I was so unenthused by it that I couldn't even finish it. I attributed some of it to being older than the target audience but Ruby/Sapphire didn't seem to have much "heart" to it. The game, story, and most Pokemon were pretty forgettable, and FUCK that shitty ass horn music.
Over time there were some minor blips of Pokemon in my life (tried Nuzlocke Challenge and had a good time with that, shitposted with anons when Twitch Plays Pokemon first came onto the scene (before the fucking retarded democratic system ruined it and before autists took it WAY too seriously), gave Pokemon Go a shot and it was fun for like a week but Niantic fumbled hard and went absolutely nowhere with it) but I think I've outgrown Pokemon. Which is fine, I'm happy with my memories of being 12 and getting into the craze with my friends and siblings. It was a good time.

I'm going to be honest, after playing pokemon sun and see what they did in the ultra versions I see no reason to keep playing the series from now on, since pokemon X & Y these game started to go downhill and it's going to get worse from here on out.
maybe they will make them more linear and hold your hand just for you to "expirience" the half assed story or make them without post game at all and have the audasity to say "just play online if you want more content" only for gamefreak to make a "enhanced" version months later with just some insignificant extra plot/game mode that they want to call a post-game + legendary hunting.

Gen 4, other then health bars roughly taking the time it takes to make a pokemon game to go down it was just when I got sick of the series.
Too many things were just stale with the series.
Double battles didn't become the series standard when that's the only way there's actually a theory of strategy in these fights other then counter picking into OTK, even Final Fantasy Mystic Quest knew you need 2 party members for an interesting RPG fight, but in pokemon double and tag battles are so situational and boss fights never had them so there was never a point in keeping the moves that are clearly favoured for them.
Designs also became too similar, like going into gen 4 I seen on its route 1 a birb and a filthy Canadian which reminded me of gen 1 where I seen a very similar birb and a filthy Mexican on the first route, like just use the old birb and the Mexican, why claim all these new mons but they're just the old ones again, Gen 7 at least didn't list the new forms as new mons.
Too tired of this series I looked into gen 6 and 7 for their mega's and Z moves but it looks like literally who cares tier, only things stacked on and nothing in the games being changed to make them more entertaining and engaging.

Shigeki Morimoto is still there. He's been responsible for the battle system since the beginning. The only feature that's actively improved with every release, and doesn't suffer from constant rollbacks and lack of planning. Once he leaves, Pokemon is basically fucked since the combat system, the actual gameplay, will likely die without him.
He also directed HG/SS, which is the most feature-dense Pokemon game.

The models actually look alright, although they're WAY too high quality for the 3DS to handle I understand they're trying to future proof it. As you mentioned, the colors are pretty faded, which can be fixed. The biggest problem with the models is the animations, which are limited, bad, and even when they're good they lack lots of personality. Compare it to HAL or Genius Sonority's work in 3D and you'll see the problem. At least they added some walking animations in Gen 7, so it's clear they've got more in mind. But at this rate it will take a while for them to get really good.

Gamefreak claims Z never existed, and never was going to exist. They bucked the trend on 3rd versions awhile ago. Much like B2W2 being two separate games and a sequel to BW, they wanted to do "something different" and "defy expectations" with generation six.
So they just didn't make a game at all.
I'm also snooping through the credits now since I didn't realize Ohmori directed SM. I thought it was Iwao, and thought he was a super faggot for directing SM and USUM back-to-back, but he only directed USUM. It seems Iwao was working as the battle system director in SM, possibly as a protege to Morimoto.
Realizing that Iwao is a battle system director who attempted to salvage the fucking mess Ohmori made caused my opinion on him do a 180. Although now I'm upset with myself for suddenly thinking there might be some hope for Pokemon.

If you look at the way Game Freak develops games, Sun and Moon were already in development as far back as X and Y's release date. While they have bucked the trend of proper third versions, they have released a sequel and a third version split into two since then. Notice my quotes around "Z", it could have been called anything, I should have called it Gen 6's third version. In addition, Game Freak has really been fucking pushing the yearly releases lately. Either the game was such a shitshow it got canceled before X and Y even came out (although likely after it went gold), or Gen 6 was such a shitshow that they decided to funnel the "Z" team to making Sun and Moon not run like absolute shit. I'm also surprised Ohmori directed two fucking games at once, since he did both ORAS and SM.
Oh, Pokemon has tons of hope if Ohmori and Masuda stop directing games, at least then they'll be easy with some decent extra content instead of patronizingly easy and full of shitty cut-scenes. Basically Kirby instead of what we've got now. Iwao added a shitty version of the Battle Factory, band new Pokemon, and some cute side stuff, he seems like he'll be alright. I do think the Switch games will be better than the 3DS ones if Ohmori or Masuda aren't directing all of them. Not like that's hard, the 3DS could barely handle Game Freak, not to mention Game Freak barely has any idea what they're doing in 3D. Maybe thy the time Gen 10 rolls around they'll be back on track, the switch to 3D fucked them up something fierce. It doesn't help that it's blatantly obvious that now they feel like they need a gimmick to sell them. For the first 4 generations it was just improving the formula, but since Gen 4 was perfect battle wise, Gen 5 just went with a soft reboot thing where they made a shit ton of new Pokemon. This. The last game I bought in the series was Pokemon X, and it was really lame. I think Gen 4 and 5 were the peak of the serious (personally, Platinum is my favorite). I preferred it back when it was 2D sprites, I don't like the 3D models nearly as much.
