As for an actual answer, it must be because I'n an arafag, but my favorite companions are those that give a motherly feeling when interacting with the player or other support characters (dedicated to help/protect/heal people and being gentle), no matter their actual age or class is.

As complements to the main character, just like IRL.
Are you a big burly fighter? She'll be the support healer.
Are you a gentle cleric? She'll be the amazon that takes down your foes.
Are you a wise wizard? She's the aprentice that recharges your devices.
Are you a traveling alchemist, brewing potions and traveling around? She's the sorcerer that defeats your foes.
Women, like pretty much every other character, should have a role that does not replace your own, otherwise you'll ask yourself why even bring them along anyway? However the difference between temporary mercenaries you can hire to help you for a while, if they are truly to be your companions then they must complement your playstyle, making up for your character's shortcomings while you do the same for her.
Her usefullness will earn your respect and vice-versa.
This obviously applies to just about every companion for any role, not just women. What can make them surpass that however and set them in a better position is if they have actual character to them. If they have goals and dreams that they want to complete, that they strive for and that you can possibly help.
But also if, throughout the story and during hard moments for your character, they are also present to support you with action but also kind words.
It also helps of course if they are fun to hang around with and actually have a personality.
Sadly this last bit is often interpreted as making "Lol so randumb XD" characters that are never relatable or likable and having companions with retarded goals on their head that you can either support or "me no like you no moar", plus at most they lend you their weapon because you're stuck in the same mess.

Vilja is really whiny and annoyingly Current Year. I played Emma's Morrowind mod (White Wolf of Lokken) and her Oblivion mod (Vilja for Oblivion) and they were decent. Skyrim Vilja is infuriating. To give an example of the differences:
When you get into Windhelm with Vilja, she'll start crying about the poor rapefugees even without you asking about her opinion.
Meanwhile Sofia will just state that the refugee situation is just way too strained and something has to be done about it outside of just impotent bullying. She's deliberately vague, but it's a smart response. Even Ulfric admits that once the war is over he needs to take care of the pajeet elves, drastically if needed.
Another difference is that Vilja doesn't act like a Nord at all, whereas Sofia is passable at least. Vilja is written by an irl female, and it's blatantly obvious that it's a self-insert. This means that her wimpy, emotional dialogue is completely out of place. Not only that, but your selection of responses is also written by Emma, which results in you having to pick from answers that a female would want to hear out of you, more or less. To cut it short, your character is completely pussywhipped when it comes to dialogue choices.
There's more cases of her preaching about Current Year stuff that doesn't fit with TES at all, I think she's up in arms about the poor oppressed Khajiits, too.

They made good decision by giving her a backstory and not revealing it from the start. Having some mystery inside the story is pretty much a must. If your writing is good, what will happen next should be a mystery. If you want your writing to just be fun to read, hide something to make a mystery.
On top of the fact that her design and race is good choice. In Skyrim every companion is bland so some people actually choose just Argonians or Khajits because their races alone were interesting. By making a fetish game they accidentally managed to go one step further and make her race even better.

I'm not so sure. I get that you can't just mocap it like you could for a human, but on the other hand sneks don't have legs. You could probably do some very minimalistic animation on the snek body. The human body would tilt or sway, but it's still simple motion rather than complex moving parts.
