There are the reasons mentioned, which hold some merit but ultimately fall flat on their faces when you look at what other games have been willing to do and often get away with.
In general, I'm going to ignore how the conversation dissolved into political commentary about WWII because it's fucking stupid and belies the point of the thread in the first place.
The real reason you don't see it is because it suffered from some of the same issues you don't see many 17th, 18th, and even 19th century wargames: the strategy and tactics that were being used. They exist, sure, (Holdfast, Verdun, Bannerlord or whatever, etc) but are easily beaten by WWII and even Vietnam. Note how Verdun did a proper WWI game and while it's fun for a while, it's still a grind (not in the game sense, but in the warfare sense) until you're good at it, and then it becomes kinda boring when you are finally a legend in the trench. Battlefield 1 avoided this by, well, avoiding WWI combat entirely and just made an arcadey objective shooter with WWI-era weapons.
The Korean War suffers from this issue. Sure, it happened after WWII, which saw a LOT of small unit action and maneuvering, which makes for great game combat dynamics. The Korean War, however, was very much an odd attrition-based war: Waves of Koreans (and Chinese) would try and overcome an American position. The Americans would either hold the line (Imperial Guard style) or fall back, only to retake the position later. The US military literally made the Claymore mine because of this, deciding a massive shotgun-style mine was needed for taking down the rushing Mongolian Horde. (If you're in any modern military you've likely heard this reference before, and now you know why). Now, compound this by the fact that during the time of the war there was NOT much in the way of heavy vegetation in Korea. Funny note: MOST of South Korea's current trees, be they in forest or on mountains, were planted by American soldiers AFTER the fighting stopped. It STILL occurs today and is even a national holiday for the South Koreans. (I barely managed to avoid having to plant trees while I was stationed there, I would've also ended up on the news and I didn't want that) So think about that: massive wakes of slants rushing your defensive position in open, albeit mountainous, terrain. Oh, right, and harsh fucking winters that KILL people. Sound like fun?
So now, let's pretend you're a game dev. You have a choice, given what I've said since it is, quite frankly, the reality of why this all is as it is: You can either make a historically accurate Korean War game that's essentially just shooting at waves in fairly open areas OR scrap historical accuracy and make it a Korean-War-skinned Call of Duty game. If you pick the latter, you're a shit for being so historically inaccurate and perpetuating the problems with most modern shooters. If you pick the former, the player base will likely end up getting as fatigued by the attrition as the soldiers in the actual war.
Is there a middle ground? Yes. Look at Rising Storm 2: Vietnam. First off, it's a good Vietnam game, probably the best currently available aside from Bad Company 2: Vietnam. But Vietnam (games) has an inherent advantage I already touched on: vegetation and terrain. A Korean War re-skin of RS2:V would see much of that vegetation obliterated and therefore would take away much, if not all, of the advantages that the Vietnamese factions receive in RS2:V. In short, it wouldn't be fun for the unlucky faggots stuck being the Koreans who'd have to basically rush you like a fucking horde and hope for the best since, well, that's what they actually did. Does that sound like fun to anyone?

You’re not in control of a single character; you’re in control of a squad, which you command tactically and creatively to figure out how to either take the hill/mountain/valley or defend it. There would be a fuck-ton of replayability with something like that because of how varied Korea’s terrain is. You could even mix it up with… not urban engagements, because there weren’t any cities on that godforsaken peninsula, but village-based combat, sure. Plenty of squad-level fun to be had.

Answering your question, it was boring. Crappy WW2 era tech with massive support from outer forces who had nothing to lose. The Koreans as whole were essentially pawns. The stalemate ending, the proxy war nature and the huge civilian casualties make it a remarkably pointless conflict. Letting Mao win the Chinese Civil War was an unfortunate (((mistake))).

Forgot to mention that the game is fairly standart RTS stuff, the only thing is that you had some pretty unique characters with some pretty cool designs.
I remember in the Fascist campaign you play as a giant german soldier, a ruthless spanish sniper, and a youthful italian soldier that is part of a squad of italian soldiers that roll into battle on armed motorbikes.
The only reason to ever play the republican campaign is to play as a hot republican chick.
