The Mii-based games always support them. Even if they're not useful for unlocking shit, they always grant some sort of minor reward.

Splatoon also uses them for skins and Smash for creating custom AI fighters that learn from you. Skylanders uses them quite a lot but the game is kiddieshit, Mario Maker has various skins unlocked by using them too.

To scan an amiibo on the switch you have to actually hold it on the right thumbstick. You'll also have to change the clock on a lot of games to use a lot of them. IIRC Mario Maker, Mario Kart, Zeldo, odyssey and splatoon don't let you get anything past like the 4th scan in a day
