I generally set up my PC for local multiplayer games on lan parties. It has a lot of success.
I also managed to introduce quite a few games to the lan party goers. But you need a group of about 4 people willing to play whatever you bring. When others see you having fun, they will join.
The biggest problem is the disappearance of piracy on lan parties. Too often every lan starts with looking through your mutual steam/whatever libraries and then picking a game that everybody has, which is generally only the most popular crap available.
But this year, we are going to bring some change to that. Hopefully it will work out fine.

I've got a really good track record for finding fun multiplayer games DONE DIRT CHEAP like SWAT 4, TES3MP, Risk of Rain, cube world may its soul rest in peace, F-Zero GX emulation, etc. and if it's something which requires multiple computers I try to provide a GOG link or just flat out give my account information to other people so they can install and play it.
It's really just people who can't be fucked to do anything unless it's easy "press a button and it's installed/configured/ready to go in ideal setup" and takes no effort. I've got to practically do all the hard work on other people's setups using different operating systems and it ultimately feels more like I'm an IT contractor than anything else.
Really frustrating how lazy people are nowadays. I agree with most that you said. Its hard to get people to give a game a chance. Especially if it requires more than just clicking next several times. Luckily for older games, you can just copy the folder most of the times. Still, developers should realize how good a form of advertisement piracy at lan parties was. Whenever you play with friends, the problems of the game become a lot less obvious.
Our lan party used to specifically make all their tournaments new games that had not yet been released before our previous lan. Back when new games actually had lan support. We had to move away from that, using a combination of new games, great older games, open source games and samescreen multiplayer games for our tournaments. Because otherwise we can't get people to play in them. Even when you can win nice prices like headsets and the like.
