Get them at a bridge choke point. That alone can help you defeat 8 armies with one stack. What difficulty are you playing on the battle map? I have found the higher difficulties make the A.I. easier to beat because of how suicidal they are. One thing to keep in mind though is that if you can defeat that army they will likely not be able to make a new one because of the time it takes to make troops. Mountainous terrain is also a good place to defeat two or three stacks of armies With just one.

Invest in archers. Let them all come to your city walls and destroy them there. Once you burn up their siege equipment, it's just target practice.

It's not cheating you just let them take Greece. The wealth from each Greek city brings in more income than 20 of your barbarian shitholes. No matter which faction you play in vanilla RTW, always head immediately for Greece.

I did that once as Scipio in a short game. Became the strongest faction by a wide margin then Julius won because they went straight for their targets.
