I never understood the point of these. They're just inferior adaptations. Same thing with movie novelizations (although I know some argue those go more in depth into various topics) but the comics do literally nothing new.

Could someone explain to me why they exist? Seems like a waste of resources that could be going towards telling original stories.

The super old ones made sense, because a lot of people didn't have access to home video. Now, I'm not so sure.

I suppose they just seal the gaps and allow the EU to fully exist as its own entity, separate from the movies. The actual novelizations themselves however, are great companion pieces to the films.

Not entirely true. The comics sometimes have scenes based on earlier versions of the script, deleted scenes, CGI that was never animated, footage that was never shot etc. For example, this is noticeable on the Order 66 montage in the ROTS comic.
