Jedi Knight was a really great reinterpretation of the original trilogy's jedi journey where the hero learns the ways of the force through primarily trial and effort. Kyle goes through some real hard shit and scrapes by against the odds through sheer determination and willpower. Everything he achieved on his journey felt earned.
Contrast that with Rey who ends up on top of every situation, never has moments where she scrapes by or suffers from not being strong enough because she's always strong enough. There's no trials and very little effort to her development and nothing feels earned. That's a bad reinterpretation of the original trilogy's jedi journey.

We could have got two more sequels after Jedi Academy to expand on Jaden, even a dark side route one if I remember right. But LucasArts was always rife with mismanagement even at it's peak so they shelved a lot of great projects.
Remember how Battlefront III was scrapped when it was almost ready for release because LucasArts thought the Force Unleashed II would sell better, and how all the Republic Commando sequels were cancelled because LucasArts overestimated the potential sales of the first game and felt disappointed by their profit. That Darth Maul game got fucked over because of lousy people running LucasArts into the ground too.
Even George caused some mismanagement himself because he got slightly too involved in the creative process of 1313, forgot he wasn't making a film and made the devs redesign key elements of the game based on his whims. But being fair to him, I guess it probably didn't have a chance of coming out before the Disney sale even if he'd let the devs do their jobs so it was going to be cancelled anyway.

If Kyle was really a Gary Stu he'd be the best at everything, like J.J. Abrams tried to make Rey out to be. He's not, though. He's competent at piloting, but not exceptional, and he's never shown to have any notable scientific or technological skills. If there's a computer system that needs to be broken into, he relies on Jan for that. He's just really, really good at fighting, and he wasn't magically granted his legendary combat prowess because the author wanted a power fantasy or to push some kind of political agenda. He developed it through years of training, like a real person has to.

I do agree that Disney is trying to make everything so sterile but its to profit off the imagery, that is the real reason why they bought the "Star Wars" IP for Vader, X-Wings and Tie Fighters. It's not about lore and strange little stories across a whole Galaxy, because that has no marketable imagery but would be enjoyed by fans. Even for instance Kyle Katarn isn't worthwhile to use because he isn't an established look, and so to much to invest than get in returns.

Kyle Katarn isn't an established look in the same way that the main cast of the movies are, but I expect that he enjoys nearly that kind of status among Star Wars fans who played the video games. I only played Jedi Academy when it was current and even I was broadly familiar with the character. There are many young adults today who were kids and teens playing those games when they were new that comprise a demographic to market toward. I feel like it's just laziness. That they expect they can rely on SW iconography to print money for them without lifting a finger in anything except new movies and spin-offs tied to them.
