If i remember correctly, some old EU novels addressed that point. They were basically shoving artificially grow children into the meat grinder. They were basically fleshy battle droids at the beginning. At the late war they developed identity enough to be saw as individuals, down with defections and all.
I never liked that "Clone Wars" name when only one side, the defensive one, used them. "Clone Wars" implies a war caused by clones, or clones being used by both sides, not a secessionist war.

I think in the BTM (Behind the Magic) discs it was hinted to being clones on both sides sort of like in Star Trek with the genetic wars. I do like the name even now however because the Clone was the main instrument in changing history, the droids just fell away.

I think the CW cartoon also addressed this by saying that after the war they'd just become a police force on other worlds until they died out.

In the old canon: CSI started to use clones too with new improved (but very expensive) technology in the last years of war. But the Jedi and collaborators managed to destroy the facilities soon because this new army showed to be more superior than republic ones.

I honestly always preferred Zahn's implication of what the Clone Wars was. That the clones were actually the enemies used by the bad guy faction. I also liked the clone army that was briefly used by the CIS in the comics which were cloned from a badass nikto warrior with amazing abilities. A regular Sly Marbo among the Nikto.

It always weirded me out how the CW cartoon always portrayed them as ordinary soldiers and even had one episode of them going to a shore leave of sorts, getting drunk and hitting on betty bot waitresses in a clone bar. I think it was during that shitty brain chip episode. They even talked as if they were ordinary recruits. And Yoda interactions with them in the season 1 and that whole diverse personalities and free thought shit felt really off. I mean, it added for some interesting episodes, but when the majority of clones are like this it just doesn't even fit together with the movies or pre-established media which showed them as one dimensional obedient slaves, with uniqueness and individuality being a very rare trait among only some clones. Like the "defective" units.
