If you go by canon then there's only one of those things since it's technology from the far future and they only acquired it through time travel bullshit. If you go by STO which carries on after the Trek franchise then holograms are frequently used outside of ships suggesting they managed to reverse engineer it some time after Voyager got back or created some other form of portable holo-emitter.

Not sure if I'd want my own 2D character to be honest. Maybe just as something to play around with, not even in a lewd way. I'd much rather have something more real looking. It'd at least be immersive that way.

I always hoped that the Borg were smart enough where that wouldn't work more than once. The original concept of the Borg was supposed to be they adapted to whatever shit you threw at them, so if you used bullets they'd start fabricating anti-ballistic armor, or swords and they'd use plate armor and metal shields and shit.

Voyager and First Contact kind of shit on that idea in favor of 'you get a few phasor shots at them', but Best of Both Worlds had them easily stop a nanite attack and handle unconventional energy field attacks because they knew they were coming.

Holograms are horrible, though. There's an episode of DS9 where the ship was crewed entirely by one insane hologram which killed the old crew, prior to that it was a small ship crewed with a few living things and a few holograms. Besides that, they require emitters to do anything (The doctor in DS9 got a mystical portable emitter from the future). They're susceptible to hacking, too, like when some Ferengi hacked the Barclay hologram and made it nearly murder the entire Voyager crew just to get some Borg nanites. So, basically, they're unreliable in pretty much every aspect. Not the kind of things you'd want to crew a ship, or fight a war.

Plus they're way too powerful when they go rogue. Very hard to keep a leash on them once they figure out they're nearly invincible and they develop a grudge.

Trouble is, anything you do interact with would HAVE to be 3D. So you end up in a situation where you have a whole bunch of objects around you transitioning from the 2D projection into 3D objects and back, which would be too much for the suppression of disbelief. Also if anything goes wrong on the holodeck, which it will, basically every single suitably sturdy 2D object that's not just a projection, but an actually physically interactable one would become a stupidly sharp blade.

At best it will be like those awful games where everyone looks like dolls based off of the characters, but not the 'proper' 2D art style. And honestly, that's kind of reassuring even to someone who barely reads anime, because in the kind of future Star Trek has, manga if not anime would still be very possible and far easier to distribute etc, always on a flat screen or replicated paper page. Compared to the absolute butchery the holodeck has done to live action shows, manga, and possibly western style comics as well, endure.

I disagree entirely. The forcefieds and the visual projections don't have to match up. Say you want to pick up a cup. You can pick it up and feel it in your hand, but it can still appear visually as a 2D cup in your hand. It would basically be like going through life with one eye, only a bit more extreme.

The thing there is that I can't see the federation citizens managing to survive the several centuries of 'kill or be killed' that would allow them to survive a DAoT scenario. If we look at the closest we have to that scenario in canon so far (the Maquis) they just seem to be too soft to manage that.
