Anything vehicle related really. I could watch videos on YouTube or google search "how do cars work" or so on, but I've gotten used to learning through reading pdfs, books, even manga guides on subjects and would prefer using this type of written medium if possible.

Ironically, Wikipedia is your friend. Just search for anything you'd like to know more about and you'll get a general idea without needing any background knowledge. From there on, you can specialize your knowledge towards cars you have a special interest in.

Try Car mechanic simulator, it's a great starter.

Car mechanic simulator is pretty good for this. You start a slow pace and work up too bigger things till you just start buying cars to rebuild. I played 2015 a lot then got 2018 a few months ago.
