Cooking thread, share your favorite recipes, stories about cooking or just general food stuff itt.

What you like to cook? What you like to eat etc…

Ill start with a dish i did this weekend, it was something similar to goulash

Ingredients:

>650g of chicken breast

>Half of Red Paprika

>2 spoons of some plant oil

>2 parts of garlic

>Half of onion

>400g of tomato paste

>Half of spoon of butter to thicen everything up and add some taste

>Spices: Some oregano, some powdered paprika, salt pepper etc…

Preparation: Add oil on a pan/pot, fry onion (previously cut into small pieces just like all other ingredients) When its gets darker add garlic, paprika, after a while add chicken, when chicken changes color and its ready add tomato paste, stir for a while, add spices and viola you have a main dish, now you one need some rice/potatoes to go with it. The portion i made was enough for me for 2 days

tomorrow ill probably go lazy route and just buy 1kg of forozen vegetables, add some sausage and fry it on the pan

What do you want? When it comes to main dishes for eg. you can even do something as simple as buy seasoning for chicken breast, cut chicken breast to small pieces, use vegetable oil to oil up the pan, throw meat there till it gets white everywhere

Meanwhile get the rice cooked and boom you have a dinner for one day. Nothing easier than that

I just need to share my eggplant parmesan success story

1. sliced into 1 inch rounds

2. salted a lot on both sides

3. sweat the eggplant for 15 min in colander

4. dried with towel and pressed as I did so to get it really dry

5. use good flavorful bread crumbs and just a little oil in a wide pan

6. heat up sauce and pour on

7. pile on shredded parmesan and smoked cheddar (really compliments the eggplant)

I've noticed women like to have recipes when cooking which is probably why they enjoy baking much more than guys. While recipes are a good jumping off point to learn how to cook they're not important especially if you want to save money. All good cooks can improvise and you will always have leftover ingredients. Learning how different ingredients come together and how cooking something differently changes the texture and taste of it is important and you won't get than from recipes alone.

Once you have the the basics down and can cook a few of your favorite recipes perfectly every time, experiment. Add things to it, take things away, change up how much of an ingredient you use, or how you cook it, until you have an understanding of why it tastes the way it tastes. Then when you have leftover ingredients or can't make it to the store you know how to take what you have and make it come together in a way that tastes good. At the end of the day being a good home cook is about being able to feed people, not just show off. Also learn how to make stock and soup almost any leftover anything can be made into soup.
