The "iphone 5" encryption code is not stored on the SIM-card. There is however a K stored on the SIM, and indeed, in case of plain old 2g GSM that's broken. Often in case of 3G networks as well since they alllow for downgrading attacks.

The vulnerabilities are so well known and academia published so much about it already that you can simply all the GSM around you with GNU-radio & a couple of lines of code of your own.

If that's too honest and simple for you; pay some 25k for access to the roaming house and eavesdrop all the things by means of exploiting ss7.
