You have to find a balance between reasonable animal welfare and health.
Buy free range eggs, it doesn't cost a lot but then you are supporting better lives for some chickens. Excellent protein source.
Eat more vegetables, make it half your plate of food, not just a bit on the side. Dark green, carrots, and so on.
Mushrooms, eat a lot of these, different types if you can find them. Good protein and minerals.
Nuts and seeds, walnuts and almonds are good, for protein and healthy fats.
Eat wild, or brown rice if you can. A lot more goodness in them.
Find other gluten free cereals and add those regularly.
Clean vacuum your whole place, wash your bedsheets weekly in non-biological washing powder, don't use too much as it irritates the skin.
Better if it is unscented.
Don't use soap, find a natural or gentle cleanser, soap dries your skin and worsens eczema.
Vitamin and mineral supplements:
vitamin C, vitamin D3, vitamin B complex including B12, very important. zinc, magnesium.
B vitamins are what vegans tend to lack. Make sure you have at least those.
Can you eat potatos? If so, alternate those with rice.
