Gonna try to stay away from too many carbs, I want my beer today.
I want to eat the yam candy I made too (y'know for the kids).
Peel the sweet potatos.
Slice the sweet potatos into thick circles, 1/2in or so. Put aside.
Prepare the syrup by uh making syrup. Water and sugar equal parts, low temp.
This being fall, however, we put in your favorite fall spices. I went with anise seed, cinnamon, cardamom (is cardamom a fall spice?).
After the syrup is browned and NOT the consistency of honey (has to be less syrupy than that) take it off the heat.
Place the potatoes into a pan and drizzle the syrup evenly.
Put the lid onto the pan, then bring to quick boil.
Immediately after boiling starts, bring heat down to simmer. Cook until potatoes are soft (but not too soft, that'll just make mush).
Layer the potatoes onto a plate and pour syrup over them.
Serve warm, with cold ice cream if you don't mind losing your gainz.
Pro Twist: try finding some of them 'fancy' purple yams for extra color.
