UFC 1, as all early UFC events, was organized by the Gracie family to promote their brand of jujitsu and featured handpicked fighters. It also only had 8 fighters in total. No valid conclusion can be drawn from such a show.
Fortunately we don't have to rely on a single event from 25 years ago, as we have extensive stats from hundreds of MMA events since then. And BJJ is most definitely not dominant. Most records in the UFC are not held by BJJ practitioners.
As of right now, there's not a single champion in the UFC with a BJJ background:
Stipe Miocic (HW): Boxing (Golden Gloves champion) and wrestling (NCAA Division I wrestler at Cleveland State)
Daniel Cormier (LHW): Wrestling, both Olympic Freestyle Wrestling (2004 Olympic Team) and NCAA Division I Wrestling at Oklahoma State University
Michael Bisping (MW): Former two-times Pro British light heavyweight Kickboxing champion
Tyron Woodley (WW): Wrestling (NCAA Division I Wrestling at University of Missouri) also known for his boxing skills
Conor McGregor (LW): Boxing (Pro record: 0-1)
Max Holloway (FW): No competitive background outside MMA, best known for his Muay Thai. Out of his 18 pro wins, only 2 have been submissions.
Cody Garbrandt (BW): Boxer (Amateur record: 32-1) and High School wrestler.
Demetrious Johnson (FlW): No competitive background outside MMA, High School wrestler, best known for his freestyle and catch wresting skills.
