I think in this context it is because substance in trinitarian discussions isn't used in the sense of the common meaning of the word which just means "stuff" or "what it's made out of"
so in that context, dividing the substance doesn't make sense - and the catholic church admits this in it's catechism and says that it's not using the word substance according to it's usual definition

That's exactly what we mean by it. In fact, R.C. Sproul once explained "of the same subtance" by saying it means "the same stuff".
