Why should people think of philosophy as reliable in terms of theology when it doesn't provide any definitive proof or evidence of God that are demonstrated to be true, but just arguments for God's existence?

I don't know. Reason may lead one to faith, but ultimately reason doesn't lead anyone against his will. Any NPC can dig their heels in – even on losing ground – and be validated by others for it.

People prefer the idea that God never existed rather than change their ways.

*God as Himself is a supra-physical being, hence meta-physical arguments are not at all incongruous given the type of being God is. To demand physical evidence, therefore, is to commit a category error.

*No one believes such arguments are meant to have some knockdown force. People who don't want to be convinced are simply not going to be convinced. God doesn't impose Himself on others, not unlike any normal, healthy human being. The following C.S. Lewis quote puts it well: "But you now see that the Irresistible and the Indisputable are the two weapons which the very nature of His scheme forbids Him to use. Merely to override a human will (as His felt presence in any but the faintest and most mitigated degree would certainly do) would be for Him useless. He cannot ravish. He can only woo."
