Let's say nuclear war happens and society is wiped out. Every building is rubble and every book is burned. However, there are still humans who have survived and begin to repopulate the planet

What happens to Christianity? Does God just enact final judgement right then and there? Does God send new prophets and recreate the Bible? Does God start a new religion to replace Christianity? Does God just turn his back on Earth? Is God preventing such a situation from taking place?

Are all bishops of the Church dead? If so, then such a situation would not take place, either by a saving miracle, or the final judgement right before it. If some of bishops are still alive, then it could take place, however I guess that the final judgement would happen right after

Yes, take the 1983 Soviet Nuclear False Alarm Incident for example or the Cuban Missile Crisis in general.
