If you're a TR guy then "The Englishmen's Greek New Testament" is good, or Jay Patrick Green's complete interlinear Bible. JPG's edition comes in either a single massive volume, or four more reasonably sized where volume 4 has the whole NT.
If you're looking for a modern text then I haven't used any in Interlinear, but the Tyndale interlinear NT has good reviews, though it uses NA27.
Be sure to go full spartan more often than just "reading" the interlinear. Its a good tool if you need to look up a single word's meaning quickly, but you could get spoiled really easy.
