I get that i'm approaching this from a protestant view, despite having only gone to Catholic churches, and haven't joined any denomination. However, when a Heretical bible comes out, it's clear that it's different from the other ones, but when it a heretical church (of all denominations) comes out, what reliable defense is there besides the bible?

The video is about how even intelligent people can be trapped in cults pretending to be "christian" or other conspiratorial beliefs using a system of blackmail and love bombing, the first few steps can be applied to racial realism. This is why it's a big deal to be able to confirm churches, it's not just to piss off random Christians who i'll never meet.

All Apostolic Churches were founded by the Apostles and have always had the same traditions. These protestant accusations 1500 years after the fact that those traditions are false are simply silly. Christ did not intend for tens of thousands of denominations treating the Bible like a Shakespearian play, each drawing their own conclusions.

You can see in the Bible many times where the Apostles said 'I won't write, I'll settle this in person'. And I particularly like how the Copts treat the issue, they simply say Christ did not write a book, he sent His Apostles to preach and that Christianity is a religion of tradition and oral teaching.
