Because they're in the Himalayas. Arid climates aren't conducive to rot. Dry, cold air = dehydrated corpse.

From what I have see, they do but very slowly. Sokushinbutsu practise is to achieve that when still alive and they do through special diet and aim to pass away during meditation. The pic related was also passed away during meditation. As per the belief and your post itself.

I guess I might as well ask here: What happens to people that heard about Christianity, but for one reason or another were dissuaded from it and live otherwise good lives under another religion? Like I'm sure some Buddhist monks have heard of Christianity but clearly chose Buddhism. Do they get the hell treatment regardless?

Diet, mostly. They kill their gut flora, lose as much body fat as possible and "enrich" as much of the water in their cells as possible with preservative chemicals. They also kill their skin flora and enrich their skin in a similar manner with salves and baths.
