We probably could, in theory, but God chose to give us bodies as well.

could be the case that whatever substantial "mode" you find yourself in (whether spirit or body) will appear to be 'materialistic' in some sense. Like, even souls must be made of something, have some parts or conditions, even if they are ethereal similar to fire or air. So spirit beings in a spirit environment might think they have "bodies" as well, from their frame of reference they might seem "fleshy", but a different sort of flesh.

The human being is a whole only when possessed of both body and soul. You could say that we are more than the sum of our parts.

The soul is our essence as persons, but it is just a static object on its own, unable to function in any way considered "human".

The body is the functional part of a person, but it would just be a vedgetable without a soul.

That is why we need the ressurection. It reunifies a cleansed soul with a deified body.
