Well that was disappointing. Feels like they just threw a ton of shit at a wall hoping for things to stick.

This seems like a very common occurrence for '80s/early '90s sci-fi animu in general. Why does it happen so much? Corporate interference of writers' visions? The fact that most mecha series are always intended first and foremost to sell toys rather than tell a good story? Are there any examples of sci-fi/mecha that actually do feel like they have a fully-fleshed out world that fully delivers on its science/philosophical concept? All I can really think of is Mamoru Oshii's stuff.

It's really frustrating for a science-fiction series to have a cool idea (last of humanity being guided/controlled by a massive computer system) and then fail to follow through in exploring it.

A lot of 80s sci-fi anime was light fluff made just to capitalize on the world-changingly popular Star Wars. It wasn't only anime, of course, look at the original Battlestar Galactica and many other throwaway sci-fi movies.

The only mecha series that has the most unretarded worldbuilding is Patlabor. It's a very much 'realistic' setting given the circumstances for the Labors having the same availability of cars during their debut in the early 1910's. Hell, even the movies themselves pretty much distanced away from the mechs at first to focus on the bigger picture of things.

No thanks, i'd rather read my own 1990-2000s educational books.

I mean HAVE YOU SEEN the garbage peddled today? It's absolutely disgusting, literal fanfics being published on the storefront.

Half because they want to sell toys, half because they liked Star Wars. You need to stop watching kids shows and genre schlock and complaining that's what you get. Look for the ones that are about as popular among anime as the same sort of thing is with film, meaning very uncommon.
