I tried making some yesterday. Turned out much too thick (more a paste than a sauce) and it was overspiced. I definitely used too much roux, but I'm still unsure whether I needed more liquid as well or whether the amount of roux alone was the problem.

Did you make the roux yourself? I made it from 50g of butter and about 3 tablespoons of flour, which is just enough for 1l of water/broth. Spices are always a bit tricky, I usually go by the colour of the roux - if it's too light I'll add another teaspoon of spices until the colour is just right.

I did the roux myself. I used about as much flour as you did despite only using 2/3 or so the amount of broth; too much, as I said. I suspect my proportions of the roux itself were fine, as in the amount of flour compared to the amount of spice, and that if I used a more appropriate amount the flavour would have been fine.
The trouble is deciding next time whether to just reduce the roux or to also add more broth, since as it was cooking I thought it looked a little short on liquid compared to the solid ingredients. I don't want to swing too far the other way and have it too runny.

If you guys want, this is my japanese curry recipe, completely from scratch, and has never left me disappointed:
454g meat. Ground or chopped pork usually, but ground beef works well too.
2 potatoes, chunked
2 carrots, chunked
1 large onion or 2-3 cooking onions, diced fine (cooking onions are tastier)
spices:
2T flour
1T yellow curry powder/garam masala
1t ginger
2 cloves garlic, minced
1/4t cinnamon
1/4t black pepper
1/4t salt
About 2-3C boulion. I use mushroom, but chicken is good too. Just add enough to cover everything, and keep adding if it gets too thick. The amount needed will vary based on the condition of the meat and vegetables.
To go full lazy, you need a cast iron dutch oven so you can just fry in there. Otherwise, fry everything in the heaviest pan you have, and then transfer to the heaviest pot you have
Fry the onions in about 2T butter till golden over medium heat. Then add the meat and garlic and fry till fully browned. Add the flower, curry powder, and ginger, toss it around. This will make a sticky mess everywhere, so have that broth on hand.
One it's getting dry on the bottom, right before it starts to scorch, dump about a cup of the broth in and add the rest of the spices. Using a wooden spoon (non metal so you don't scratch) make sure it's mixed around and scrape everything off the bottom.
It should reach a boil by the time you have scraped the bottom adequately, at which point add the rest of the broth, carrots, and potatoes. Lid it and wait for it to reach a boil, then mix it up good and turn it down to low for about 40 minutes.
This makes about 2-3 servings, and I generally double it so I have plenty of leftovers.
