It's only "easy" when you have a vested interest in learning it, in the case of Japan that would mean being a westaboo or having some specific interest with a community that mostly speaks English. When all the media you're exposed to is either in your native language or gets dubbed/subbed in your native language and your only experience with English is having it taught as just another subject in school, English is very hard to learn. The original anime had a typical Japanese combination of extremely serious subject matter yet very lighthearted humor. It wasn't grim and gritty but it wasn't exactly Astro Boy either.
The PS2 game had a much more serious take on the story from beginning to end, making it feel more like Berserk (which probably adopted the concept of "marked man continually hunted by spirits and demons" from Dororo).
In the movie they did something similar but kept the more grim tone overall while, at the most odd times, having a kick-in-the-nuts gag kind of joke. Weird tonal problem.
In both the anime and PS2 game, although Dororo was always the lovable comic relief Hyakkimaru wasn't eternally stoic. He was serious-minded but had an occasionally sarcastic tone about him that could let Dororo's personality bounce some funny lines. I think the movie somewhat had this too but it sucked so I forget a lot of it.
It seems as though this new iteration is going for the most severe imagining of the story. Still it misses the mark on certain things. The scene with baby Hyakki pushing himself to eat from the bowl is iconic and highly important as it conveys not just the dire state of the child but also his superhuman perseverance which will be the crux of his character throughout.
Instead they just show him for shock value.
I also don't like the upskirt shots on Dororo. He's a character that is a very young kid who you're supposed to think of in that sense. There's no reason aside from comedic value to show any part of him--unless they are taking for granted the audience already knows he's a she and want to fanservice a child.

Maybe but again it's not much darker than the manga. It's a blood-soaked time period, a lord sacrifices his own son for power, people a getting cut up or even melted, neither version is very happy story. I don't want to discuss it too much to avoid spoilers for those who haven't read it yet but I assume one of the next few episodes will be about an other dark chapter in Hyakkimaru's past which is also in the manga.
The Doc's backstory in this version is darker but he didn't really get much focus in the manga. Here we see that he is driven by guilt, in the manga he was just a really nice person and medical genius.
Hyakkimaru is of course the biggest change and I think that's also what makes him more interesting. Since he can't really express or sense emotions now he's a much colder character. In the manga he's acts just like a normal person and has found ways to perfectly cope for his lack of senses and voice. That makes him more relatable but also a bit more generic.
I think it's notable that Dororo is actually nicer here than in the early chapters of the manga.

Same advice for you but I'll spoil you that much: No, for several reasons. The whole Hyakki being the "child of light"-thing was game exclusive and so was Dororo being created by the demons fiends. She has a completely different backstory, which we might see next episode. Also, the manga is open-ended since the story was never really finished so the game's ending was original too. Many events and characters were changed for the game. I liked that, since it has many surprises even if one has seen the other version before.
I can't say much about the old anime yet, currently watching it. It's pretty good but I don't think the buff look really fits Hyakkimaru and I'm not sure about why they added a tiny dog with a gay hat. It's nice that the new series refenrenced that in ep 1 though.
