Honestly, "I had a good run and now I'm going to go do something boring" is pretty much the weakest way to draw the series to a close. Assuming this is the end, of course. It would have been cliche, but having Ippo eventually become the trainer who picks up some nobody off the streets would have been a nice, if a bit cliche, way of bringing things full circle. It would still be better than just having Ippo throw away years of his life to train to become a champion boxer just because.
