I'd play an RPG where you got to run a slum (the game would be called Slumlord).
You'd be in charge of the sub-neighborhoods within the slum, naming people as faction leaders and delegating tasks to them like making people pick up trash on their streets or unclogging sewage ditches. The people wouldn't listen to them though, because they don't have any real power and nothing to lose by disobeying. Disease would be rampant of course, and so you'd get people trying to keep their street free of disease by routing sewage on to other streets. This would cause turf wars, and deliberate destruction of streets and neighborhoods in the slum. If you didn't stay on the ball the whole place would die out.
Or maybe instead of Slumlord I would call it Watkinsville because that is exactly what has happened with this site.

It could use historical examples of varieties that we know how they were bred but, for the most part it would have to rely on algorithms to determine success or failure. Say you plant broccoli and kale in an attempt to hybridize. We know the results should include broccolini. The game would mostly teach how to properly breed plants with a focus on varietals. Similar games based on husbandry would be nice.

Last time I played the sims I played as a kidnapper perv. I locked the wife in a 2x2 room in the basement. Her only entertainment was when the husband came to visit for sexy time. She had no toilet or bed, so she'd pass out from exhaustion in a puddle of her own piss. It was surprisingly fun keeping her alive and keeping visitors from finding her. The husband had the sadist trait so he was always happy from her suffering.
I was thinking this would make a great stand alone game. Kidnapping girls. Designing dungeons. Evading suspicion. Hiding bodies. Doing coat hanger abortions. Preventing escapes.

The guide is necessary since the game never tells you, it has a crossbreeding mechanic to it's farming simulator. Oh and did I mention it takes like ten seconds to plant and water each seed, or that crossbreeding is tied to RNG as well?

Was watching HealthyGamer interviews and thought about how some Ace Attorney mechanics could be used in social interactions in social sims (Harvest Moon, VNs, etc). Not to solve grisly creative murders but to listen properly, generate points of catharsis for believable bonding between characters, instead of autism systems like skip dialogue for mission, daily gift, scripted cut scene, 50/50, etc.

Minecraft has mods (I think IndustrialCraft and Forestry) that are pretty good with that, the former lets you crossbreed plants directly and the latter lets you use bees to make new flowers.

A Tech Demo Type Game, which would primarily focus on making you experience the fear of being in the middle of a decently populated german city, while a monster roams the town.
There is not a lot of gameplay. No Survival mechanics or regular enemies. The entire engine is just focused on recreating the nightmare you might have had once, where you wake up in your hometown and a giant monster roams around and destroys it.
It has an extremely sophisticated AI, where it's not going to easily notice you. But if it does, there is very little you can do about it and you get to experience one of hundreds dynamic, very spooky death scenes.
The game has extremely good graphics. The town it depicts is actually a very good replica of the real life location.
However there is another modus, where extra tunnels and underground facilities, in particular catacombs under churches are added for you to safely retreat to. They are greatly expanded compared to real life. Think of the Empire of the Dead under Paris.
The sequel of the game is already announced, which would actually add some proper game mechanics, survival, expanded map size to rural areas and regular smaller enemies.

A couple things, although I could see people other than myself enjoying them
First, I want a metroidvania where the main weapon used is the MC's outrageously huge dick like in that Berserk doujin and the whole game is dirty jokes. Actually, fuck it - I'd settle for a fighting game character who slings his dick around as a weapon. I have no idea why this idea keeps popping into my head but whenever it does I start giggling so maybe getting it off my chest will help.
Second, I want a SF colony management game that's more like Farming Simulator and SimCity than Animal Crossing and Rimworld. I'm probably going to do a shitty job of explaining what I want but essentially I'm after mid-level autism (something intended for but not limited to a community of dozens or low hundreds - not so few that you have to manage the lives and individual concerns of every single colonist or so high that it's a number in a statistics tab) with a focus on administration (planning, budgeting, etc.) instead of driving the tractor yourself but not being so removed that micro is off the table. The most interesting feature would be the granularity of the settings; you could tweak the autism from "casual" (basically the Sims) through "German" (Farming Sim '19 + Moonbase Alpha + CAD software) and the scenarios could range from "crash-landed in an alien jungle with a pocketknife and box of band-aids" to "extremely competent and extremely well-funded megacorp colony expedition heading to an asteroid to set up a mining outpost" and all points in between.
And oh look, mark actually dropped my post instead of just saying he did.
