Is there a reason to still have an exFat SD card in your Switch anymore with USB installing and shit around? Mine just corrupted Smash Ultimate, so I have to redownload like 15 GB again.

Probably shitty exfat drivers. Anyways, you can just boot from USB as you said, only put stuff in your SD card that you frequently use. Get a hard drive.

I remember often hearing about it being easy to install an SSD to a PS4, I don't know about replacing the original drive, unless installing an SSD involves removing the original drive.

If you want to have many games installed for handheld mode and don't want to have shit hanging off the Switch USB-C port.
I never had problems with the exFat-formatted microSD card in my Switch. It's when you plug it into a Windows PC that Windows tries to "repair it" and breaks shit. Then you have to re-install what Windows attempted to "fix". I think the Nintendo Switch writes things to the SD card it in a weird way that Windows doesn't understand.

If an HDD is high capacity and cheap it is usually 5400RPM and slow as fuck. SSDs are cheaper so we don't have to deal with that shit so much anymore, but Samung had another convenient "power outage" so they'll be jacking up NAND prices again this year.
