Minecraft would have been a good game if it had higher difficulty to make it engaging, more utility to make it more convenient, and more content to expand the scope.
In other words, mods can 100% fix it and solve these problems.
Try Madpack2 or some other pack with a difficulty focus, on hardcore, and have a blast trying to make it for more than a few nights. It's fun, brutal and sometimes frustrating.
Extremely comfy game.

I cheat all the damn time in my SMP server, because I have commands. Sometimes I just teleport somewhere because I don't feel like walking or flying. Sometimes I get to a project and realize I'm short one redstone component, and rather than spend 15 minutes going back to base, just make it appear in my inventory. Sometimes I switch into peaceful mode when I don't feel like having creepers blowing up my stuff and then switch it back when I need an XP farm to function. Sometimes I spawn parrot eggs because the jungle is a thousand blocks away and it's bullshit that you can't breed them. Sometimes I just feel like having another stack of iron blocks because 1.14 broke my iron farm and I need another beacon. Plus I use coordinates all the time; I use them for navigating in the nether, for planning large projects, for making rail lines, for making sure a building is symmetrical, and once or twice to figure out which direction spawn is when I don't have a map and am out on the open ocean at night. I've also used F3+G to find chunk boundaries so I can determine where to put a slime farm, and F3+B to see entity bounding boxes so I can make sure and get a turtle out of a minecart without hitting the turtle.

At the stage of the game I'm in on that server, I have everything I need in spades; most people have one "perfect" enchanted diamond pick, while I have four, as well as two with silk touch (and also four shovels and two axes and five elytra, etc.). The only thing I need is time, because I have a job and family and a life and time is at a premium. I can either waste time, or I can maximize my enjoyment of the game. Some types of grinding are soothing, but other types just irritate me. Why do what you don't enjoy?

Trying to assemble a 1.7.10 modpack featuring some tech (including Greg, of course) & magic (thaumcraft plus a fuckton of addons) plus a handful of japanese mods, while also trying to give it a western vibe or theme, so naturally I'm getting real tired just trying to make this damn thing work before even playing it. Minecraft would be a much better game if instead of having an empty boring dimension like the End it instead used summoned bosses with very specific mechanics that would require you to build areas to fight them

I don't really get into redstone much but I've watched videros by other people who are and they are fucking amazing. You can use them to compact redstone constructions and in fact you can sometimes use them to make redstoneless mechanisms. What's more is they can be moved by pistons so that means that you can create redstone builds that move around.

They're update detectors. Anytime a block is updated, even those that don't cause a redstone signal (like a pressure plate) it fires a redstone signal. So you can have a device trigger when someone sleeps in a bed, when a plant grows in front of it, when something is placed in a chest or an item frame or hopper or anything else. Since it's a block rather than something that has to be placed ON a block, you can now make vertical redstone very easily. You don't need to fuck around with slabs or torch towers anymore; just make a stack of observers.
First thing I ever used one for was a sugarcane farm. Before, you had to have one hooked up to some kind of redstone clock that would harvest them on a regular schedule, which wasn't very efficient because growth is random. Now you just stick an observer at the third space of one of them, and whenever that particular plant grows to three high, it harvests the whole lot. Similar designs can be used for kelp, now that that's a thing.

Depends what is most comfy for you.
If you like farm life and animal breeding, try Animania. Changes animal breeding mechanics and makes them more useful adding more and better drops, alongside adding prettier and varied breeds of each animal. For example, some cow/bull breeds drop meat that gives you short regen when eaten, while other breeds give you better milk that can be turned into cheese. Chickens drop feathers at random and need a nest to lay eggs, and eggs have a low chance to be born. Pigs play in mud.
