Basically an AI dungeon master would be cool.
Instead of having a bunch of expensive, canned voicelines for a game, it would be cool if the AI could generate a conversation on the spot for each characters personality and use sound samples to create the speech.
Another thing that would be cool is if the AI could handle quest arcs/level design. The same way a Dungeon master would on pen and paper.
Just having that in even just a text based game with supporting visuals would be really cool.

City builders. I want some hyper autistic AI to fully simulate how a city would react to my senseless administration and urban planning. If they even protest or riot because I built a rollercoaster that launches people into the air like some space railgun next to their houses, that would be amazing since I could then just take the god tools and send them a tornado to make them shut up.
I don't know, there could be so much fun and interesting things to do with such an AI that I can't write all of them here.

I'd like for an actually perfect AI to play Starcraft and prove that the best strategy is actually something really stupid and boring. Maybe some weird proxy rax play into constant marine production.
I bet the actual peak of that game is some sort of rock papers scissors where hard rushes lose to blind defensive play which loses to economic play which loses to hard rushes. Kinda like it is now sometimes, but way more obvious.
The current best AI they have playing Sc2 is a shitter that skirts by with its ability to perfectly monitor the map and produce units 100% efficiently even while fighting. It does weird builds that are empirically worse than the more refined builds people already figured out.
