I think White Knight Chronicles is what you want. I never actually played the games though, so I can't tell if they're good. But it sure looks cool.
And I remember Arc Rise Fantasia having some god-like giant creatures that looked like cool armors, but I don't think they had a much active role in the gameplay and setting.

Because mecha in a traditional fantasy setting is interesting? You might as well say "if you're going to have swords, why not make the game medieval?"

Well, considering mechs, at least of the Japanese variety, are typically just a version of cool soldiers or super heroes, use them as the setting's version of soldiers, knights, and heroic figures. Fight wars between kingdoms in mechs. Slay a dragon with a mech. Fight against the big bad's army of horrible monsters with a mech. Anime has already done this, so I don't see what's so difficult about a game doing it.

White Knight Chronicles is the closest aesthetic match, but the game itself is mediocre. The combat especially is bad. I don't know what world it would be considered MMO combat, though - it's just badweird "JRPG trying to be different" shit that they love to do.
It's also impossible to beat now, since the final boss was part of the online servers. So I guess he won?

I still can't believe there has not been one game to take the Escaflowne aesthetic and go with it. Hell, it's perfect for a musou game (one where troops actually stay in formation though), instead of heroes you have a big mech duking it out with other mechs while infantry formations fight each other or support you.

Accretia was the best. I still carry the memories of the main NA server (Spirit) in which we dominated. That weapon in this video was my weapon I got as a dungeon drop, the first ever lvl 50 Type D (wearable at lvl 45, no one was 50 yet) weapon worn in North America. Not my character but an old guild mate I lent it to while I leveled my sword to 99 so I could equip it. Good times.

The PS Escaflowne game is a re-hash of the series. Most of it is cut-scenes and text between characters. So, its pretty much a VN, but with no route choices and the occasional mech fight. I used a pc emulator with the physical disk and it worked fine. That is, if you want to play it.

Not really, at least with the Wii/3DS game (and XB2, I guess? Haven't played it myself). You're never in a mech, and instead fight everything on foot. I guess XCX would be closer, but I also recall complaints that you don't actually get mechs to use until a good ways into the game, and I'm thinking it might be more sci-fi than fantasy, but I can't say for sure as I never had a WiiU.

The only mecha game I played was mechassualt on the oignal Xbox. I remeber the second ond had online and there was a social area up in space, and people glitch out of the social zone and be in the skybox. I think that was the first online game I played. I only grew up with consoles, I never had a computer.

AC is challenging to an extent but not especially hard except for Last Raven and Master of Arena since they're both climax games for the series and their engines. The games themselves can be cheap bullshit like Dark Souls but that's why you abuse heavy armor, bazookas/rocket launchers, machine guns or lightweight builds to kill shit.

The thing that gets most people usually is that making a build work through skill takes a lot more skill than just being good at making a purpose built AC for the mission giving you trouble.
Especially in 2AA / SL where multiple fully equipped medium + AI AC will get on your ass at the same time, although the big white never were much of a threat if you're mobile and / or have missiles.
